Apr 2016-Darwin-Bynoe

I did keep this beautiful barra, but not just for its flesh. I filleted and skinned it as per usual. Only this time I kept the skin in an ice slurry to ensure it didn't get marked while returning to Darwin. Upon return to Darwin I took it to me ol mate Paul Arnold who is pretty handy with a camera. We set up his Phase One 'kick arse' camera over his coffee table and Paul went to work capturing 120 mega pixel detail of the skin. This photo has been enlarged and printed on high end canvas and now hangs at the Oyster Shack.
